We started calling these pancakes Georgie Pancakes because they are my sons absolute favorite pancakes!! When presented with these tasty pancakes our tiny 20 month olds will eat three or four of them all by himself, usually faster then I can cook them. They are a soft and sweet pancake and topped with Greek Yogurt or Pure Maple Syrup they are delicious or as my son says “numm numm”.
8 Tablespoons of flour of your choice (I use “white” wheat flour).
1 Teaspoon of Baking Soda
1/2 Teaspoon of Salt
1 Cup of Greek Yogurt (we use Greek God plain or honey flavored)
2 Whole Eggs
1 Teaspoon of Vanilla
Butter for frying and serving
Fruit of your choice such as blueberries, strawberries or Raspberries
Warm Pure Maple Syrup
In a small bowl whisk together vanilla, eggs and honey and set aside.
In a separate bowl stir together flour, salt, and baking soda
In a medium bowl mix the Greek Yogurt with the dry ingredients. Mix until just combined, do not over-mix. Then whisk in the wet ingredients with the dry ingredients, mix until just combined.
Heat a griddle to medium low heat and melt butter on griddle. Drop a scoop of batter onto the griddle, about a 1/4 to a 1/2 cup of batter. Let cook until batter starts to bubble and the edges are start to turn brown. Flip the pancake and cook on the other side about a minute. The pancakes will be a little on the soft side.
Serve with your choice of toppings. ENJOY!!!
